Blueberry BBQ Sauce

This is enough to cover 6 chicken breasts, also tastes great on ribs! Can’t wait until the farmer’s markets really get going and I can buy some nice blueberries. I’m also tempted to try this recipe with raspberries!
- 2 c fresh blueberries
- 1/4 c balsamic vinegar
- 1/2 tsp garlic powder
- 3 tbsp honey
- 3 tbsp ketchup (I prefer Organicville)
- 1/2 tsp ground ginger
Combine all ingredients in a saucepan, bring to a low boil. Reduce heat to a simmer. Allow to cook for 10-12 minuts, until sauce thickens, stirring occasionally. Remove from heat and allow to cool. Pour into blender and blend until smooth. All Done! Super easy and super delicious!
Barbecue Rum Chicken

This chicken is goooood. Best if it’s grilled or broiled, but you can bake it too if you wish.
- 6 boneless, skinless chicken breasts
- 2/3 c dark rum
- 1/3 c orange juice
- 1/3 c soy sauce (San-J)
- 2 tbsp honey
- 1 tbs finely chopped fresh garlic (I like to do this first, as garlic should be cut 10 mins before heating to allow full flavor and health benefits)
- 1 tsp dried thyme
In small bowl, combine all ingredients except the chicken. In a large freezer bag, place 2/3 c of the marinade and the chicken, tightly seal. Turn the bag several times to coat the chicken. Refrigerate at least 4 hours or overnight, turn the bag occasionally. When ready to cook, remove the chicken and discard the marinade. Start cooking the chicken. In a one-quart saucepan, cook the remaining marinade over med heat until it comes to a full boil and cook it until slightly reduced- approx 5-6 mins. Drizzle the sauce over the chicken just before serving!
I love using freezer bags to marinade my chicken! It’s great if you’re planning a cookout at the park or camping, because you can have nice marinaded chicken without the mess and you don’t have to worry about it spilling into your cooler.
